Mini-Cheeseburgers (and a bit of news about the author)


A few weeks ago, I took my dusty running shoes out of its box and laced up for a walk. I figured it would be quite a nice change for me to spend an hour or two on the tracks than spending the evening indoors – watching TV and munching on whatever pasalubong my papa brought home from work. I have never been a fan of intense physical activity. I used to play basketball when I was younger but now, the closest I get to sports is “watching” it. I hate sweating. I hate jumping around.

The doctor advised me to get moving but she wouldn’t allow me to jog because I’m too heavy and this can cause me to break my knees. So I researched a few articles about walking and gave it a try. The first few days were pretty taxing but then after that, it got easier. All I ask myself now – what took me so long to try it out? I’m glad I did though because it’s been three weeks and I love it. Walking 3 miles a day doesn’t feel like work anymore, I even look forward to it. Who would’ve thought, right?

I’m just happy because I’m not getting any younger and it’s tough to maintain a healthy lifestyle when you’re me (lazy and procrastinating) but I’m really trying and I guess it’s all that matters. Taking care of yourself first so you can take care of those who are around you, which brings me to another great thing – food!

I love meat and we all know it’s important for building the body. I’m a believer of the Ketogenic diet because I’ve tried it out at some point and it worked (virtually and medically). One thing I learned from a book is that fat burns fat. (GASP!) I know most of you would think that’s bull but that’s a whole other blog post so let’s get some eats did!


Mini-Cheeseburgers

Ingredients:

¼ kilo Ground Pork or Beef or a mix of both
2 Bell Peppers, diced
2 cloves Garlic, minced
1 large red Onion, diced
½ tsp Salt
½ tsp ground Black Pepper
1 tsp Soy Sauce
1 tsp Worcestershire Sauce
1 egg
1 tsp Korean Barbecue powder (optional)
a dash of dried Thyme or Rosemary (optional)
2 cups Cooking Oil
a few thin slices of cheese
Yellow mustard (no added honey or sugar)

Procedure:


This is really easy. Mix ingredients 1-11 thoroughly and form small patties the size that can fit in your palm. Fry the patties in cooking oil until each side is golden brown.


Set the cooked patties on a plate and top it with thin slices of cheese while it's piping hot then add another piece of patty on top to sandwich the cheese in. Dip it in mustard and devour.

Yield: 2 Servings

You might like these in a bun (rich in carbs) and add some ketchup (rich in sugar) but to those who'd like to gorge without the guilt, this dish is perfect and satiating as it is. Think nuggets. If you hate mustard as dipping sauce, try pure unsweetened mayonnaise or even soy sauce and white vinegar with chili. Mmmmmhmmm!
